
Chicken Pesto Sandwich
    Serves 1
    
    5 slices Mozzarella Cheese 
    4 thin slices Tomato 
    3 Romaine Lettuce leaves 
    3 oz. Pesto Sauce 
    2 slices Seven Grain Bread, toasted 
    1 breaded Chicken Breast 
    
    BREADING: 
    1 Boneless, skinless Chicken Breast 
    1 cup Flour, seasoned 
    2 Eggs, whipped 
    1 cup Italian seasoned bread Crumbs 
    2 cups Olive Oil
    
    Méthode:
    Dredge chicken in flour, eggwash, then breadcrumbs. Heat olive oil to 
    360 degrees in a saute pan over medium heat. Place breaded chicken into pan, 
    cook until golden on each side about 3 minutes per side. Reserve until ready 
    to assemble sandwich.
